The CHR disclosed to the public that the following conditions to exist in and about the above noted food establishment which are or may become injurious or dangerous to the public health or which might hinder the prevention or suppression of disease, namely:

a. The establishment is infested with mice to the extent where droppings are present on food and food preparation surfaces. Dead mice caught on glue boards are not removed for disposal.

b. The establishment does not have a written pest control record.

c. The equipment used in the preparation of food is not cleaned as required. The electric slicer is grossly contaminated with raw meat debris from the week before and there is a heavy build-up of grease and grime on other food preparation utensils.

d. Perishable foods are stored at improper temperatures for extended periods of time. Such foods include meat that is hung at room temperature overnight until dinner time the next day.

e. There is an accumulation of garbage and food debris under equipment, on and under storage shelves and in hard-to-reach areas throughout the kitchen, bar and food storage areas.

f. There is an accumulation of clutter in the kitchen and storage areas that is prohibiting proper cleaning and is likely contributing to rodent harbourage.
