The CHR disclosed to the public that the following conditions to exist in and about the above noted food establishment which are or may become injurious or dangerous to the public health or which might hinder the prevention or suppression of disease, namely:
a. Food spills and splatters have accumulated on the floors, walls, shelves, counters, under equipment, inside the dishwasher, and in hard to reach areas throughout the kitchen.
b. Cutting boards, food storage bins, and the dishwasher racks are discoloured and dirty.
c. Dishes and utensils taken from the kitchen dishwasher after the completion of a full cycle are still greasy.
d. Glasses from the bar washer are not being sanitized properly between uses, as there was no iodine in the final rinse cycle.
e. Perishable foods in the table top cooler at the preparation counter were probed at 8ºC and gravy in the hot holding unit measured 48ºC.
f. White cutting boards at the preparation tables are discoloured and deeply scored, and the scores filled with black coloured dirt.
g. Floor tiles are cracked, broken or missing in the kitchen, walk-in cooler, dishwashing area, stairs, keg room, and basement food storage areas.
h. Walls are damaged in many places and ceiling over the chest freezers has been damaged by sewer/water leaks - tiles are missing.
i. Ready to eat foods are stored among and directly below raw meats in the upright freezer and in the preparation table cooler.
j. No written records of perishable food temperatures, sanitizer strengths, and cleaning schedules are being kept.
