The CHR disclosed to the public that the following conditions to exist in and about the above noted food establishment which are or may become injurious or dangerous to the public health or which might hinder the prevention or suppression of disease, namely:

 

a. Perishable foods are not being stored at proper temperatures. Pre-cooked wieners stored at room temperature.

 

b. Surfaces/equipment/utensils are not being cleaned and sanitized

frequently or in a proper manner.

 

c. The entire establishment is grossly unsanitary, including floors, walls, cupboards, and countertops. There is a substantial grease buildup on the fume hood and surrounding area.

 

d. Food safety knowledge of staff is inadequate.

 

e. Handwash facilities are not being kept accessible for their intended use (all three sink basins were filled). Paper towels were not in a suitable dispenser.

 

f. Several walls, shelves and other surfaces are not smooth, impervious to moisture, and easily cleanable. Openings had been cut in the ceiling without proper finishing. Duct tape used around opening under fry cutter.

 

g. Several fire concerns noted, including non-mechanical ventilation over cooking equipment with suspect filtration, a piece of wood overhanging the deep fryer, and a propane grill next to the deep fryer, within the confines of the food preparations vehicle.
