WHEREAS I, an Executive Officer of the Calgary Health Region, have inspected the above noted Food Establishment pursuant to the provisions of the Public Health Act, RSA 2000, c. P-37, as amended;

 

AND WHEREAS such inspection disclosed that the following conditions exist in and about the above noted food establishment which are or may become injurious or dangerous to the public health or which might hinder the prevention or suppression of disease, namely:

 

a.

Grease, food debris, garbage, dust and filth were abundant throughout the facility. Food preparation counters and other surfaces in the kitchen were not being cleaned & sanitized. Rancid liquid was found under cutting boards. There was a very offensive odour coming from the walk in cooler. Unsanitary conditions exist throughout.

 

b.

No quaternary ammonium compound sanitizer was measured in the prepared sanitizer spray bottles.

c.

Rags used to wipe food preparation counters were not stored in a sanitizer solution.

 

d.

Food handlers were repeatedly wiping dirty hands on their dirty uniforms. Proper hand washing was not being done frequently enough.

 

e.

Frozen chicken and French fries were being thawed at room temperature.

 

f.

Tongs used for handling food were sitting on counters at room temperature with food debris on them. A staff member was observed to open a dirty door handle with a pair of tongs and then use those tongs on food.

 

g.

Many containers of food were stored on the floors of the walk in coolers and freezer. Two bags of carrots and one tray of bread were sitting directly on the floor.

 

h.

The written cleaning schedule is not adequate and was not being followed.

 

i.

The lights in the walk in cooler, near the stairs, were missing a protective cover.

 

j.

Ceiling tiles were missing above the dishwashing area.

 

k.

There was a leak from the ceiling over the clean side of the mechanical dishwasher. The tap at the hand sink was leaking.

 

l.

There were several broken or missing floor tiles & wall tiles in the kitchen. Other wall surfaces and a door were damaged.
