inspection disclosed that the following breaches of the Public Health Act and the Food Regulation, Alberta Regulation 31/2006, the Nuisance and General Sanitation Regulation, Alberta Regulation 243/2003 and the Food Retail and Foodservices Code, exist in and about the above noted food establishment, namely:

 

Grease, food debris, garbage, dust and filth are abundant throughout the facility and on equipment. Food preparation counters and other surfaces in the kitchen are not being cleaned & sanitized. Unsanitary conditions exist throughout. This breaches Section 28(2) of the Alberta Food Regulation.

                         

Final rinse temperature of the mechanical dishwasher was measured at 57.5 degrees Celsius. This breaches Section 4.2.7 (a)(iii) of the Alberta Food Retail and Foodservices Code.

 

Quaternary ammonium compound sanitizer being used on food preparation surfaces was measured at a concentration much stronger than 300 ppm. This breaches Section 4.2.6 (c)(ii) of the Alberta Food Retail and Foodservices Code.

 

Rags used to wipe counters were not stored in sanitizer. This breaches Section 4.2.5 (d)(ii) of the Alberta Food Retail and Foodservices Code.

                         

Many containers of food were stored on the floor of the walk in freezer and walk in cooler. Boxes of potatoes were stored on the floor of the kitchen. This breaches Section 2.9 (b)(i) of the Alberta Food Retail and Foodservices Code.

 

Knife stored in crack between counters. Clean utensils were stored in a dirty tray. This breaches Section 4.1.1(b) of the Alberta Food Retail and Foodservices Code.

 

The soap dispenser at the back hand washing sink was empty. This breaches Section 30(4) of Alberta Food Regulation.

 

Two sets of lights in the kitchen were missing protective light covers. This breaches Section 2.7(c) of the Alberta Food Retail and Foodservices Code.

 

The hand washing sink next to the juice machine was filled with bottles of sauce. This breaches Section 2.14(b)(iii) of the Alberta Food Retail and Foodservices Code.

 

The current cleaning schedule is not adequate and is not being followed by staff. This breaches Section 29(1) and (2) of the Alberta Food Regulation.

 

There are several cracked & broken wall tiles in the kitchen. This breaches Section 17(1)(a) of the Alberta Food Regulation.

 

Shelves in the dry storage room are made of unfinished wood and lined with dirty cardboard. This breaches Section 2.9(b)(iii) of the Alberta Food Retail and Foodservices Code.
